My friend Randy and I go to the Original Pancake House to indulge in a little
bit of heaven...The Dutch Baby. He recently gave me the recipe and I
recently purchased a cast iron skillet while visiting my cousin Laurie.
Here is my attempt...it was really great, not quite the same as OPH, but
I am also at 8,000 ft, so I am thinking I did pretty darn well!!
The recipe that I followed is as follows....
1/2 cup butter
4 eggs
1 cup flour
1 cup milk
1/2 cup sugar, preferably brown
1. Heat the oven to 425F. Melt the butter in a large cast iron skillet.
2. In a medium bowl, whisk together the eggs, flour, milk and the sugar.
Pour the batter into the hot skillet and place the skillet in the oven. Bake
until puffed and golden brown, 20 to 25 minutes.
3. Remove fromt eh oven and serve immediately.
Get this Randy....8 - 10 servings...each serving...211 calories,
12 grams of fat, 21 grams carbs....HA! We usually down a whole
one....PER PERSON!!!
when I was a Junior in high school we learned how to make these and ebelskivers too. I took the ebelskiver cast iron when I moved out and we make then on special weekend days... Our dutch babies I like with butter, lemon, lemon rind and a titch of powdered sugar but not much...
