A few days ago, I just wasn't feeling it...that holiday feeling.
One reason being...I just switched cable companies and I can't see
the ELLEN show! Her show is the best and especially this time of
year!!
So, I decided to knit some snowy type hats and bake bake bake
lots and lots of Christmas cookies! (Mom, please forgive me if
I wasn't supposed to share these recipes, but you were at
bridge all day, so I made an executive decision. Please don't kick
my hiney!)

BUCKEYE BALLS
1 ½ lbs. sifted powdered sugar
1 lb. peanut butter
1 cup margarine
1 ½ t. vanilla
Kneed mixture with hands and roll in small balls.
Refrigerate several hours
Melt 8 oz. chocolate chips and ½ bar paraffin wax
Dip balls in chocolate

RUM BALLS
Mix:
2 cups graham or vanilla wafer crumbs
2 T. cocoa powder
1 cup powdered sugar
1/8 t. salt
1 cup chopped nutsCombine:
1 ½ T. honey or syrup
¼ cup rum, brandy or whiskey
Pour wet mixture into crumbs until a ball forms.
Roll in powdered sugar

ENGLISH TOFFEE
Cream:
1 cup butter
1 cup sugar
Add to butter:
2 cups flour
1 egg yolk
1 t. vanilla
Pinch salt
Spread on ungreased sheet. I use a 9x13 pan.
Beat one egg white. Spread on top of dough.
Sprinkle with chopped pecans and cherries cut in half.
Bake at 275 degrees for 1 hour. After 30 minutes
remove and pat down egg white on top

ReplyDeleteSo how much of that full bottle of rum was left after you finished baking???????? Nothing better to wash down those buckeyes with than good old rum!
ReplyDeleteSounds good, can not smell them, but bet are all yummy. What do you use the parafin wax for? Just wish I still had the energy to do all of them. Guess what I am going to try making the buckeyes. I LIKE mes
ReplyDeleteStace ....your mom and I use to make those Bourbon Balls to send to the boys in the Service .... pen pals. I made some while my dad was painting the kitchen .... with old stinky paint ...... it affected the cookies but sent them anyhow. The recipient wanted to know if I was trying to poison him.
ReplyDeleteStacie, I think your pix are terrific - as usual. I was going to ask about the rum too but then just read Millie's note and cracked up! I can see her startled face and then big smile:) Mom was really proud of you for doing all you did with the cookies and helping her get excited for the holidays. Good on you baby sister!!!
