My niece, Courtney, introduced me to this recipe for Vegan Chocolate Chip Cookies, pretty darn good if I do say so myself. (I'm realizing there are two different recipes for Chocolate Chip cookies on this website and some of the "tweeks" I made myself to this recipe, match the other recipe...hmmm....
Chocolate Chip Cookies (from www.chooseveg.com)
2 3/4 cup flour
1 tsp. salt
1 tsp. baking soda
1 cup margarine (I used Earth Balance)
3/4 cup brown sugar
3/4 cup sugar (I used 1/2 cup sugar and 1/4 Agave Sweetener)
1 tsp. vanilla
Egg replacer equivalent of 2 eggs (Ener-G Egg Replacer works best, but you can also mix together 2 tsp. cornstarch and 1/4 cup water) (I used 1/4 cup applesauce with 1/2 tsp. baking powder)
12 oz. semi-sweet chocolate chips
Preheat the oven to 350 degrees F. (I bumped it up to 375 for 13 minutes).
In a medium bowl, mix together the flour, salt, and baking soda.
In a large bowl, cream together the margarine, brown sugar, sugar, vanilla, and egg replacer mixture. Stir in the flour mixture and mix well. Add the chocolate chips and mix.
Drop the dough by spoonfuls onto a lightly oiled cookie sheet and bake for 8 to 10 minutes. Cool on a wire rack.
Makes approximately 40 cookies.

I made a calendar this year for Christmas for my whole family....all pictures of my mom & dad from at least 50 years ago. The calendar is by my stove, so while I was baking the cookies today, this picture of my dad was keeping me company.
And....this is the progress I have made on my project (by the way, it is a pair and this is the second one...so I have come a long farther than you might have assumed. Kristin Nicholas is brilliant and I LOVE THIS BOOK!

ReplyDeleteSaw Beth Malone yesterday at church. We had a "Coffee Break" and it was fantastic. Much better than the Mission Church about 4 years ago. The musci and singing were stellar. The speakers (3) were brilliant. Wish you could have been here. Probably will never be duplicated. love, Mom Get those darn gloves done
those cookies look AMAZING!!! good on ya for trying the vegan thing for a month...i may give that a shot too - i have to try something soon. my stomach has been nothing but angry with me after wintering on the ice last year!
