Made a Tofu Scramble this morning...recipe by Isa Chandra Moskowitz "Vegan with a Vengeance". I'll tell you what I put in mine.
1 tablespoon Olive Oil
1/2 large yellow onion, chopped into 1/2-inch chunks
1 whole zucchini sliced thin
1 tablespoon of crushed garlic (I have the bottle of Trader Joe's Garlic, didn't have any fresh on hand)
1 lb. extra-firm tofu, drained
1/4 cup nutritional yeast
Juice of 1 lime
1 cup of salsa
spice blend:
2 tsp. ground cumin
1 tsp. ground paprika
1 tsp. salt
Heat the oil in a skillet over medium high heat. Saute onions for 3 minutes, add zucchini , saute for 5 minutes, add garlic, saute for 2 minutes. Add spice blend and mix it up for 15 seconds or so. Add 1/4 cup water to deglaze the pan, scraping the bottom to get all the garlic and spices.
Crumble in the tofu and mix well. Don't crush the tofu, just kind of lift it and mix it around. You want it to remain chunky. Let cook for 15 minutes, stirring occasionally and adding splashes of water if necessary to keep it from sticking to much. Lower the heat if tofu sticks. Add the lime juice. Add the nutritional yeast and mix it up. Add splashes of water if it mixture sticks to pan.
I added 1 cup of salsa at the end, cook for 1 minute extra.

ReplyDeleteLooks totally yummy! Just so bummed that Antz has this sensitivity to onions...I can't cook with them as much as I would like because the smell really bothers him. I usually use onion powder instead. I'm working towards less meat in my diet. I've started eating lots of 'beans and brown rice bowls' with homemade salsa and goat cheese. And I've started experimenting with spelt (which is a grain super high in protein) and quinoa.
